Congratulations to Healy-Murphy sophomore Bresyanna Z. for winning third place in the annual “Best Healthy Dish” competition at the 2016 Healthy Taste of the Eastside event held on November 5. Bresyanna worked with dietitian Dr. Christiane Meireles to prepare a dish they call “Murphy Stew” (here’s the recipe). The stiff competition included both professional and amateur chefs but a combination of fresh ingredients and just the right spices earned Bresyanna one of the top spots.

Bresyanna’s participation in the competition is a result of Healy-Murphy’s partnership with the University of Texas Health Science Center at San Antonio School of Nursing. Each week, Dr. Meireles teaches students in health and parenting classes the importance of proper nutrition for themselves and their families. Students regularly research recipes and prepare meals and snacks that are both healthy and delicious. Bresyanna and Dr. Meireles even used tomatoes and serrano peppers grown right here in Healy-Murphy’s own vegetable garden. Dr. Meireles and her students are now looking forward to harvesting and cooking with newly planted winter vegetables. We’ll be sure to share their recipes!
